Oranges are some of the most versatile, well-known fruits in the world. Famous for its citrus taste and namesake color, the Valencia orange is the traditional variety we see in local grocery shops and supermarkets. The 2 principal varieties are Valencia oranges sport the same characteristics: juicy, sweet with few seeds, are available from early March through late October. On the other hand, “navels” are, juicy, sweet and nearly seedless, with a season that runs from November through March. Navels have the distinctive belly-button-shaped navel opposite the stem end.
How to Store
Storage
– Store immediately in the warmest part of the walk-in cooler.
– Store in the original sealed carton and off of the floor to help prevent dampening of boxes from the condensation/ moisture in the room.
– Store clementines away from foods that readily absorb odors.
– To prevent the spread of mold, remove moldy fruit immediately from the case.
Handling
– Follow good rotation practices, first shipments received should be used first.
– Do not drop; this fruit will bruise easily.
– Expect to rotate fruits within 5 days of delivery.
– Never refill or reuse citrus cartons.
– Store prepped product immediately into refrigeration (covered) upon completion of the prep to minimize browning and dehydration.
– Avoid placing the case or raw product on non-sanitized kitchen counter tops to help prevent the potential for cross contamination.
Preparation
– Prep fresh daily as needed. Try not to use prepped product from the previous day.
– Wash thoroughly in whole form before cutting.
– Always use clean & sanitized cutting equipment.
– For maximum juice yield, allow fruit to reach room temperature before squeezing.
