Description
The pink grapefruit is similar to a Valencia orange in terms of shape, though their tastes are very different. Its pebbled skin will range from a bright yellow to an orange-yellow color. Grapefruits have a fairly thick rind and segmented flesh. Grapefruits will range from red, sweeter varieties (Rio & Star Rubies) in the winter to pale pink, more sour varieties during the summer months.
How to Store
Storage
– Store immediately in the warmest part of the walk-in cooler.
– Store in the original sealed carton and off of the floor to help prevent dampening of boxes from the condensation of moisture in the room.
– Store grapefruits away from foods that readily absorb odors.
– To prevent the spread of mold, remove moldy fruit immediately from the case.
Handling
– Follow good rotation practices, first shipments received should be used first.
– Do not drop, grapefruits will bruise easily.
– Expect to rotate grapefruits within 5 days of delivery.
– Never refill or reuse citrus cartons.
– Avoid placing the case or raw product on non-sanitized kitchen counter tops to help prevent the potential for cross contamination.
Preparation
– Prepare as needed. Try not to use the product from the previous day.
– Wash thoroughly in whole form before cutting.
– Always use clean and sanitized cutting equipment.
– For maximum juice yield, allow fruit to reach room temperature before squeezing.
– Store prepped product immediately into refrigeration (covered) upon completion of the prep to minimize browning and dehydration.
