Description
Green Onions have a thin, slightly bulbous white neck at least 2-3 inches in length and a bright green fluted top that ranges from a quarter to a half an inch in diameter. Overall length should be trimmed uniformly to 10 centimeters to ensure product quality.
How to Store
Storage
– Store immediately in the coldest part of the walk-in cooler. Kitchen heat will cause rapid deterioration of quality.
– Store in the original sealed bags and in the original case to protect.
– Keep onions away from products that absorb odors.
Handling
– Follow good rotation practices, first shipments received should be used first.
– Never open the sealed bag until ready for preparation.
– Onions have an expected shelf life of 4-5 days. Plan to rotate frequently to maintain quality.
– Avoid placing the case or raw product on non-sanitized kitchen counter tops to help prevent the potential for cross contamination.
Preparation
– Prepare as needed. Try not to use a product from the previous day.
– Keep bags in refrigerator until use. Return unused portion, resealed, into refrigeration immediately.
– Rinse thoroughly before use.
– Store prepared product in the refrigerator.
