Description
Plantains are close cousins to bananas, similar in color and form. This Banana-shaped fruit, however, has thick, greenish-yellow skin. Its flesh cannot be eaten raw; it must be cooked. Having said this, plantains may be used at various stages of ripeness for a wide variety of dishes. Think outside the box with this fabulous fruit; in its green stage, a plantain exhibits a sweet flavor and may be used in desserts.
How to Store
Storage
– Store in the dry storage area of the kitchen. (Preferably in a dark area with light humidity)
– Do not store in a cooler.
– Plantains produce ethylene.
Handling
– Follow good rotation practices, first shipments received should be used first.
– Do not wash plantains before storing.
– Expected shelf life of plantains is 3-5 days.
– Handle with care, do not drop or shake as plantains will bruise easily.
– Maintain a high humidity level to minimize water loss and skin browning.
