Description
Lemons are one of the go-to staples of the fruit kingdom, useful in all kinds of scenarios: give your dish a natural, citrus flavor kick, or turn a sweet dessert into a savory dish with just a dash of lemon. Lemons are identified by their smooth, bright yellow skin and elongated shape. The fruit is used for culinary and non-culinary purposes the world over primarily for its juice, though the pulp and rind (zest) are also used mainly in cooking and baking.
How to Store
Storage
– Store immediately in the warmest part of the walk-in cooler.
– Store in the original sealed carton and off of the floor to help prevent dampening of boxes from the condensation/ moisture in the room.
– Store clementines away from foods that readily absorb odors.
– To prevent the spread of mold, remove moldy fruit immediately from the case.
Handling
– Follow good rotation practices, first shipments received should be used first.
– Do not drop; this fruit will bruise easily.
– Expect to rotate fruits within 5 days of delivery.
– Never refill or reuse citrus cartons.
– Store prepped product immediately into refrigeration (covered) upon completion of the prep to minimize browning and dehydration.
– Avoid placing the case or raw product on non-sanitized kitchen counter tops to help prevent the potential for cross contamination.
Preparation
– Prep fresh daily as needed. Try not to use prepped product from the previous day.
– Wash thoroughly in whole form before cutting.
– Always use clean & sanitized cutting equipment.
– For maximum juice yield, allow fruit to reach room temperature before squeezing.
