Description
Endive is a leafy vegetable belonging to the chicory family with a crisp texture and a sweet, nutty flavor with a pleasantly mild bitterness. They’re great served raw or cooked and work quite well in salads or as a side dish. It’s one of the most difficult vegetables in the world to grow, requiring a two-step growing process that takes months to take place before it’s ready to ship to your door.
How to Store
Storage
– Hold endive and escarole at 32 F and 95-100% relative humidity
– The relative humidity in rooms where endive or escarole is held should be kept above 95% to prevent wilting
Handling
– Follow good rotation practices, first shipments received should be used first.
– Do not place case or raw product on non-sanitized kitchen counter tops to prevent cross contamination.
– Maximum storage is 2-3 weeks
– Limit the time the product is out of refrigeration, do not allow the unused product to reach room temperature.
Preparation
– Prepare as needed. Try not to use a product from the previous day.
– Rinse thoroughly prior to use.
– Store prepped product immediately into refrigeration (covered) upon completion of the prep.
