Description
Snow Peas are identified by their thin, pale green pea pods and small, immature peas. The snow peas are entirely edible. The calyx will be attached, but it should be neatly trimmed. Snow peas should be packed loose in wax-lined boxes.

How to Store
Storage
– Store in the coldest area of the walk-in refrigerator. Kitchen heat will cause yellowing and the pea pods to lose their sweetness and flavor.
– Store in the original container to protect the product until prepped.
– Keep away from drafts from the cooler fan. Peas are highly susceptible to dehydration.
– Keep peas away from moisture. Moisture on the surface promotes decay.
– Peas are moderately susceptible to ethylene damage. Store away from ethylene-producing fruits such as apples, avocados, and melons where possible.
Handling
– Follow good rotation practices; first shipments received should be used first.
– The expected shelf life of snow peas is 4-5 days. Plan to rotate frequently to maintain quality.
– Never place the case or raw product on non-sanitized kitchen counter tops to help prevent the potential for cross contamination.
Preparation
– Prepare as needed. Try not to use a product from the previous day.
– Do not cut off the calyx with a knife. Calyx must be pulled to de-stem the pod.
– Peas are field packed. Rinse thoroughly prior to preparation.
– Store prepared product in the refrigerator.
